The Food Journey: Puerto Rican Day at the Cafeteria

DSC04480 Yesterday at work 90% of my colleagues packed their belongings and prepared to start working in Greenwich CT. I stay behind with a handful of others. We won't go hungry. Our private cafeteria contractually must be paid through October, so they'll continue to work their food magic for an audience smaller than their staff....

Here they are, at left, packing up into plastic orange containers that will be hauled up to CT over the weekend..

Today's Food Journey travels back in time three weeks to Puerto Rican Day at the cafeteria.. Here's a hearty 'guiso' or stew of beans, potatoes, and meat...

'Pernil' is roast pork in its juciy, succulent, and slightly greasy splendor. If you prefer to eat just the skin, you're entering into 'chicharón' territory....

Do you know your banana family? When flavored and fried, the hard results are 'plátanos when merely sautéed they're called 'maduros.' Last week was Puerto Rican Day parade here.. no photos though...
